Rethinking Skim Milk



I went to college when “fat free” was all the rage.  Snackwells, skim milk and fro-yo were in. Avocado was out. As absurd as it sounds to recount this now, it’s even funnier to think that I was in New Orleans, land of beignets and muffaletas. Little did I know that my eating regime was as off-kilter as the city’s cuisine.  Aside from improved nutrition knowledge and time to “mature” what strikes me about this type of eating is how poorly it must’ve tasted. How many cups of greyish coffee did it take to prove this point?  A few too many.  I write this to show you how easy it is to get swept up in an eating trend or prevailing nutrition advice.

You will not find skim milk in my refrigerator today and I’m proud to say my day starts with coffee and a splash (or 2 splashes) of  delicious half and half. (currently Sky Top farms grass-fed, non-homogenized, adore it). I also didn’t switch my kids to  1%  at 2 years old as the current advice from the AAP suggests. After my brief “blue period” I went back to how I was raised. A little bit of the real thing is best.

I’ve posted before about organic milk and ultra pasteurization but it wasn’t until a couple of years ago  that I realized the potential problems with skim milk. My interest was first piqued reading Walter Willet’s Fertility Foods. We have many clients trying to conceive and the research about skim dairy and infertility floored me. Low-fat dairy contributed to infertility (when issues are based on anovulatory failure) and full-fat dairy increased fertility.  What really turned me off was the proposed reasoning. When the fat is removed from milk, the portion that’s not fat contains more androgens and other hormones that may not be conducive to fertility.  The androgen argument may explain why another Harvard study found that teenage boys drinking skim milk had a higher incidence of acne.  Again, what’s in the fat or skimmed out seemed to help.

Last week, I read an article posted by my colleague Julie Negrin entitled “Is Skim Milk Making You Fat”. The article challenges the traditional “low fat dairy for health and wellness” dogma.   They write:
It’s becoming widely accepted that fats actually curb your appetite, by triggering the release of the hormone cholecystokinin, which causes fullness. Fats also slow the release of sugar into your bloodstream, reducing the amount that can be stored as fat.
I find this so interesting as we have a country that's watching dietary fat and getting fatter.  It always seems to me that children have the best innate sense of calorie regulation. An Australian study in the American Journal of Clinical Nutrition showed that children’s calorie intake did not change when they were switched to low-fat milk. Children replaced the calories with other energy sources and did not lose weight.  Another large study tracked the habits of 19,252 Swedish women for 9 years. Women increasing their whole milk consumption the most lost 9% of their body weight, on average. Women who increased their low-fat dairy the most gained 10%.

Anecdotally, I am also concerned about skim milk and bone health. Fat in milk can help us assimilate vitamin D. I have not found a tremendous about of research on this but have seen many 30-something clients who grew up on low-fat milk now with osteopenia and fractures. I’d be curious to see if the very thing we think is helping us may not be.  This whole debate reminds me of the whole butter versus margarine debate. On that subject, the great Joan Gussow said “I trust cows more than chemists.” The more I read about the processing involved in making skim milk palatable, I think this applies here too.  If you eat dairy, I would suggest a little bit of the real thing.

Just how bad are pesticides?

Last week EWG came out with their annual “dirty dozen” (and here’s a CBS segment on the subject I was interviewed for).  The dirty dozen summarizes the most highly contaminated produce and there’s also a “clean” list.  Jenn, of Peas and Crayons wrote a terrific post on the subject. I’m always curious if consumers really take action based on the results. Sometimes it seems as though there’s  the “already organic” camp who go organic to whatever extent they can afford. Then there’s the “organic schmorganic” camp (my mother is a member of) who dismiss the notion of organic is optimal. In the Venn diagram of produce purchasing the “Schmorganics” have substantial overlap with “organic = exorbitant”.  Perhaps, if we stop and think what pesticides have the potential to do to us, people would be swayed. So, just how bad are pesticides?

“Cide” means to kill. When we, or our family members, ingest pesticides we are in ingesting something designed to kill. Sure, they are designed to kill pests but you would you take a hit from an exterminator’s can? As I said to CBS, every bodily system is affected by pesticides. From cancer to Parkinson’s the research is grim. A few examples:  

Pesticides may harm your children, even if they’re not born yet
Pesticides kill insects by attacking their brains and nervous systems, it’s not surprising they affect the development of children’s brains. One study showed ADHD may be cause by damage to neurotransmitters that are affected by pesticides.

A study in the Journal Environmental Health Perspectives  also suggests pesticides may be associated with the health and development of children. “Researchers at the University of California, Berkeley's School of Public Health have found that prenatal exposure to organophosphate pesticides -- widely used on food crops -- is related to lower intelligence scores at age 7.”
What made this especially concerning was that  the results were similar for the NYC children studied at Mt Sinai Medical Center as they were for the children in California living in an agricultural center in Monterey.

Pesticides can make you depressed and less fertile
Pesticides can affect your mood with studies showing depression associated with chronic pesticide exposure. Pesticides can affect those spermies and fertility. I always talk about pesticide exposure when I see clients who are TTC. 

Pesticides can make you gain weight
We think about how certain medications make us gain weight, ever think about how each of the chemicals on your produce affect you? There's an herbicide called atrazine that causes weight gain in rodents. The mice gained weight and in  particular gained visceral fat that increases risk of heart disease. Atrazine is on of the most common pesticides used on crops, particularly on sweet corn.

Purchasing certified organic ensures that no pesticides are used.  You want to eat your fruits and vegetables without a bad taste in your mouth…and those pesticides? They taste like crap too.

Color Me Carcinogenic


On Thursday I am giving a nutrition talk at a preschool in Manhattan. I plan to cover a few topics: organics, healthy snacking and vitamins. When talking about snacks for kids and vitamins I find it impossible to ignore the topic of food dyes.  Certain artificial food dyes have been shown to be carcinogenic to animals, others affect mood and intensify ADHD and a few are associated with fertility even sterility. This is not a laughing matter. I bet you’re wondering how these dyes are approved for use; I don’t blame you if you do. The British government has urged companies to stop using most dyes, and the European Union requires a warning notice on most dyed foods. In European countries these colorings are considered hazardous until they can be proven safe. Sadly, in the US we have the opposite approach. These colorings are safe until proven otherwise.  As a consequence, Kellogg, Kraft, McDonald’s, and other American companies that do business in Europe use safe, natural colorings over there — but harmful, synthetic chemicals here. As far as I’m concerned, this is a case where the proof may indeed be in the pudding and I’ve already reached my verdict, read on and see what you think.

I asked Lisa, Foodtrainers’ favorite nutrition nerd to provide answers to some questions I’m “dye-ing” to know:

I always tell parents the food dyes are more likely to blame for hyperactivity than the sugar, what does the research show?
A British study reported in "Archives of Disease in Children" in 2004 found that hyperactive behavior increased in children given food coloring plus sodium benzoate, a preservative. Hyperactive behavior decreased when the additives were withdrawn. A 2007 study published in The Lancet showed that children have increased levels of hyperactivity after consuming drinks laced with food coloring. According to the Mayo Clinic, yellow food dye no. 5, no. 6 and no. 10, and red no. 40 all cause an increase in hyperactivity. Food additives that may increase hyperactive behavior include: Sodium benzoate, Yellow No. 6 (sunset yellow), Yellow No. 10 (quinoline yellow), Yellow No. 5 (tartrazine) and Red No.40 (allura red) Yellow No. 5, used in beverages, candy, ice cream, custards and other foods, may be more likely to cause reactions than other additives. The Food and Drug Administration requires that Yellow No. 5 be clearly labeled on food packaging along with other ingredients.  This label is just indicating Yellow 5 is in the food. This is not a warning label.

People may think food dyes aren’t an issue if you don’t eat candy or neon-colored food but food dyes are found in some sneaky places, aren’t they? 
Food dyes can be found in pickles, some farmed salmon, certain mustards, granola bars and Life Cereal. As you see from this list, food coloring is lurking in foods that seem pretty much colorless. And another place dyes are used is in medicine. Specific colors are not always listed but look for “color added”, “artificial color” or “artificial coloring added.”

Aside from mood, what more serious things are dyes connected with?
 According to the Center for Science in the Public Interest, food coloring such as blue no. 1, red no. 40, yellow no. 5 and yellow no. 6 cause allergic reactions. Yellow food dye no. 5 has triggered asthma episodes in children and other dyes, such as red no. 40, cause skin conditions such as eczema. Yellow #2 has been connected with male sterility and ADHD. Blue 1 and Blue 2 used in beverages and often in pet food has been associated with brain tumors in animal studies and Red 3 is linked with thyroid tumors.

What are examples of healthy ways to color food?
Better choices include annatto extract (yellow), dehydrated beets (bluish-red to brown), beta-carotene (yellow to orange) and grape skin extract (red, green).  These colorings are not required to be named and you may simply see colorings or color added. For home use matcha green tea powder, beet juice (makes icing pink), cocoa and avocado can be used. Here is a recipe you'll love for frosting for St Patrick’s Day
Thanks Lisa, this is great information. My advice is that everyone needs to check their food labels particularly for foods they consume regularly. If these foods contain dyes consider switching to a product that doesn’t.  And parents, know that when children leave a birthday party their behavior is not due to a “sugar high.”
